Civility, which is very much in short supply these days, seems to me to be the issue. If a woman does not want me to refer to her as "a chick," doesn't it seem like the civil thing for me to simply comply?  What have I lost?

Or are you saying that there is a fundamental truth here, being avoided?  That women truly ARE inferior, and SHOULD be referred to as "chicks?"  And that disagreeing with that makes me a friend of "wrongthink?"

I maintain that accusations of "PC" are about troglodytes wanting to tell OTHER PEOPLE that THEY are too sensitive.
